Beachy days, cheesy nights
Summer is definitely on the way. First hazy hot day of the season; got that after-beach warm burny feeling – Misty has slightly pink limbs, despite being slathered in sunscreen and wearing his sun suit and hat. Get used to it buddy-this is nothing compared to true Gold Coast summer time. A little concerned about Misty’s enthusiasm for eating sand – he thinks it’s hilarious (and delicious). Maybe he has his mother’s palette for salt.
It’s now late afternoon relaxing time- beers for the adults, tasty Cheesy Polenta Bites for the little ones:
1 3/4C water (or stock for adults, mmm salt)
1T mixed herbs
1/2C grated tasty cheese
2T grated parmesan
Freshly ground black pepper
Coconut oil for frying
Cook polenta in water: bring water to boil and gradually stir in polenta. Reduce heat to a simmer, stirring until mix thickened. Remove from heat, stir in cheese, herbs and season with pepper.
Pour onto a lined baking tray, spread out to desired thickness (5mm-1cm works best). Place tray in fridge for one hour until nice and firm. Cut into shapes – I used a circle cookie cutter in a nice size that Misty can grab easily. Otherwise “fries” are fun too. Heat 1t oil in a fry pan, and cook polenta shapes in batches, around 4min each side until brownish and crispy.
Adult versions can include anything your little heart desires (SALT) – chopped onion, garlic, olives, sundried tomatoes – the options are endless. Straight up and cut into matchsticks are so good as a side dish with a yummy aioli for dipping into. A nice change to the usual potato/rice starchy component.
